☆It is a chemical change.☆
During the process of cooking, although no visible
substances are formed, protein in the fish will be
denatured, and changed their structure. This is
considerd as a irreversible change.
On the other hand, after finished cooking, the fish is cooked
that we cannot change it to the original one.
So Cooking a fish is a chemical change.

Other information about chemical & phsical change:
A physical change is reversible, a chemical change is not. For example, the freezing of water would be a physical change because it can be reversed, whereas the burning of wood is a chemical change - you can't unburn it

During a chemical change, substances are changed into different substances. Another words, the composition of the substance changes.
