Tomato Bacon Sandwiches



Yields: 60 hors d'oevre sandwiches



Ingredients:


8 slices of bacon, chopped
1 1/2 cups mayonnaise
3 tablespoons Dijon-style mustard
30 slices of homemade-type white bread, crusts removed
15 thick large tomato slices
In a large heavy skillet cook the bacon over moderate heat, stirring, until it is crisp, transfer it to paper towels to drain, and chop it fine. In a bowl stir together the bacon, the mayonnaise, and the mustard. Spread the bacon mayonnaise on one side of each bread slice, sandwich the tomatoes between the slices, and cut each sandwich into 4 triangles.






Cucumber Chicken Salad Sandwich

Makes 4 servings.
1 - cup chicken breast, cooked & diced
1/2 - cup cucumber

1/2 - cup mayonnaise

2 - teaspoons lemon juice

1/4 - teaspoon salt

1/8 - teaspoon pepper

8 - slices Italian bread


In a mixing bowl, add the chicken, cucumber, mayonnaise, lemon juice, salt and pepper. Toast gently until thoroughly mixed.
Using a spoon or scoop, spread the chicken salad on the bread.
Place the other slice of Italian bread on top. Using a sharp knife cut the bread in half and place on plate and serve.

Ham and Egg Salad Sandwich

Makes 4 sandwiches.
Prep Time: 20 minutes

Ingredients

6 - hard-cooked eggs, peeled & diced

3/4 - cup mayonnaise or salad dressing

1/4 - cup onion, minced

1/4 - cup ham, minced

1/4 - cup celery, minced

1/4 - cup breadcrumbs

1/4 - teaspoon salt

1 - tomato, sliced (8 slices)

4 - leaves lettuce

8 - slices deli rye bread

Directions


In a mixing bowl, add the eggs, mayonnaise or (salad dressing), onion, ham, celery, breadcrumbs, and salt.
Coarsely mix the mixture.
Using a tablespoon, spread the egg salad mixture on the bottom half of deli rye bread.
On the bottom half, place the tomato slices, a lettuce leaf.
Place the top rye bread slice and serve.


Cucumber & Tomato

Makes 8 sandwiches
Ingredients

16 - slices bread
1/4 - cup butter, softened
8 - ounces cream cheese, softened
1 - cucumber, peeled and thinly sliced
1/4 - teaspoon freshly ground black pepper
3 - medium tomatoes, thinly sliced
1/4 - teaspoon salt

Directions


Spread each bread slice with butter. Trim the crust from the bread.


On eight slices, spread a thin layer of cream cheese.


Then arrange the cucumber slices on top of the cream cheese.

Sprinkle cucumbers half with ground pepper.

Then arrange the tomatoes over the cucumbers and ground pepper.

Lightly salt the tomato slices.

Cover the cucumber and tomatoes with the remaining buttered slices. Cut each sandwich into quarters.

Place the sandwiches on a serving plate and wrap with plastic wrap.


Place in refrigerator to chill for 30 minutes and serve.






Tuna Salad Sandwich

Makes 4 sandwiches.
Ingredients

1 - can (7 ounces) can tuna packed in spring water, drained

1/4 - cup sweet relish

1/2 - cup salad dressing (or mayonnaise)

1/4 - teaspoon salt

1 - tomato, thinly sliced

4 - lettuce leaves

8 - slices bread (your choice)

Directions


In a mixing bowl, place the tuna and then add the relish, salad dressing (or mayonnaise), and salt.
Mix until the salad dressing (or mayonnaise) covers the tuna.
Spread tuna mixture on a slice of bread, add 2 tomato slices, a leaf of lettuce and top with an additional bread slice.

VEGETABLE HUMMUS SANDWICHES
Serving Size: 8
1/2 Cup Green Onion -- finely chopped
3 Tablespoons Parsley -- shopp
1/2 Cup Green Pepper -- finely chopped
1 Tablespoon Sesame Seeds
1 Tablespoon Mayonnaise
1/2 Teaspoon Garlic Powder
1/2 Teaspoon Mint Leaves
1/2 Teaspoon Oregano
1/8 Tablespoon Red Pepper

2 Cups Garbanzo Beans, Canned

4 Each Pita Bread, Whole-Wheat
1 Medium Tomato -- sliced
1/2 Cup Monterey Jack Cheese -- shredded
2 Cups Alfalfa Sprouts


Combine Green Onions, Green Pepper, Parsley, Sesame Seeds, Mayonnaise, Oregano, Garlic Powder, Red Pepper & Mint leaves.
Cover With Plastic Wrap & Vent.
Microwave At High for 3 Min.

Place This Mixture & Garbanzo Beans in Processor.
Process 1 Min. OR Until Smooth.

Spoon About 1/4 Bean Mixture (Hummus) Into Each Pita Half; Top With 1 TB. Cheese.
Cover With Paper Towels & Microwave At High For 1 min.

Cut Tomato Slices in Half. Open Sandwiches & Place 2 Tomato Slice Halves & 1/4 Cup Alfalfa Sprouts Into Each Sandwich Half.
Serve Immediately.
