During July/Auguest, most airlines would not be cheap in term of price... But since you are looking at visiting quite a number of European cities... What I would suggest you to do is to look at price for different airlines which offer direct flights from Hong Kong to Europe which include Air France, British Airways, Cathay Pacific, KLM, Lufthansa, Swiss Air Lines International... After picking the cheapest airlines, you can then make a route round the places you wish to visit...
Otherwise, you can also consider airlines like Qatar Airways/Singapore Airlines which also do Hong Kong to Europe indirect flight... And I have checked that they do provide what so called 'open jaw ticket' which is like flying to 1 European city then flying back from another... For Example with Singapore Airlines you can do Hong Kong-Singapore-Paris, Rome-Singapore-Hong Kong... Then in the middle, you can do like Paris-Madrid-Barcelona-Milan-Vienna-Rome or something like that...
Inside Europe, you can consider flying as they could be similar to going around by coach or train... Or sometimes they even have cheaper fare then coach or train as well... You can have a look at www.ryanair.com , www.easyjet.com , www.clickair.com as uite some of them do provide pretty bargin flights if you book them early... And also check fare between them and for a whole week as fare could vary by far between days...
And here could be a few idea of how your trip could be made depending on which airlines you are flying with:
Hong Kong-Paris-Madrid-Barcelona-Munich-Vienna-Milan-Rome-Hong Kong
Hong Kong-Frankfurt-Paris-Madrid-Barcelona-Rome-Milan-Vienna-Munich-Hong Kong
I would suggest you to fly Cathay Pacific or other Asian carriers who have a number of destinations around Europe so that you maybe able to do a open jaw trip which would be easier for you... To start your trip at one city and finish the whole trip without having to return to the same country...
