這裡說的一串，是用繩穿起了東西的一串。例如: 一串珠仔，a string of beads.
英文中是不會在 "魚蛋" 前加上量詞，如過真的要說，唯有叫 fish balls on a stick.

串 = skewer

Skewer usually refers to 串燒 but I think you can use it here too, i.e. "a skewer of fish balls". This is seldom used by native English speakers though.

"Fish balls on a stick" or "Fish balls on a skewer" are also fine.
