You'll sweat a lot when skiing so my experience is that you only need a Waterproof windbreaker when skiing.

Deodourant/body spray

Skiing gloves, sunglasses, sun-cream, soft ski socks.

You can buy all these in hong kong which is cheaper. Other ski equipment - you can rent at the slopes and ski resorts.
