1. Yes. You may obtain a PPL in New Zealand, so long your flight school's recognised by New Zealand's civil aviation authority. However you won't be able to obtain it in two weeks time as PPL course's very intensive and usually takes at least 2 months in full time. And you're expected some more time for all necessary paper work.
Bear in mind that you arn't simply doing flight training, but you'll also spend a lot of time doing ground school stuff.
2. In Australia you may obtain a licence called "Student Pilot Licence with passenger carrying privilege". This is a class of licence granted once you've passed the General Flying Progress Test (GFPT) as the first phase of PPL. With that you're allowed to fly passengers within the training area where you've your flight lesson, provided that you obtained authorisation from your instructor. In order to obtain a PPL you need to quote at least 40 hours of flight time, covering all necessary skills and experience you need for the exam. But in reality the average time's about 50 to 60 hours. The minimum time for GFPT's 20 hours. But you may need as many as 30 to 40 hours to get proficiency before taking the exam.
3. It's possible to obtain PPL anywhere around the world, from USA to China, from Canada to UK. But bear in mind that the country you're having the training must be an ICAO member so as to have your licence recognised by Hong Kong.
