Don't think it's power supply. The power consumed is not really dependent on the programs opened . It may varies a little when there's more processing to be done by the CPU , but more programs don't always mean more processing. A program can be opened but sit there idling doing nothing.
I will suspect:
. Your Hard disk has bad sector. When more programs are opened, more swap space is required on the hard disk. Bad sectors may cause the OS to crash. Try run defrag first, then do a full scan of your HD
. Your memory has parity error. Try run a memory scan from BIOS first. Then run memory pattern tests.

During boot, press ESC or F1 (look at the screen). Then select from the menus. Exact steps vary on different BIOS. Some manufacturer have diagnostic tools that are available for download, they will have memory pattern tests. These are almost always DOS programs that come wit a bootable disk.
