Q1: Yes, you can apply for all the 3 universities. 3 programmes per university, i.e. 9 altogther.

Q2: You would not know in advance which university may accept your application, since usually the interview schedules of the 3 universities are close. But certainly apply for all the 3 universities would give you a sense of security.

Q3: It depends on which university and which program you are applying. Usually CU would be one on one, while HKU and UST prefer group interview. For my year, HKU arranged interviews for all the three choices you apply and a general interview to see if you suit HKU or not. The other 2 universities simply interview you once.
