Composite AV, the most primitive way to connect to a video source, like DVD player. Very stable but with the worst picture quality because all video signal is transmitted by one cable.
S-video is just better than composite AV by dividing black/white and color video signal so the quality is a little bit better.
Component cables divide the colors into three and transmitted by three separate cables. The interference therefore can be minimised and so it is the best among all three analogue medium of transmission.
D-sub is in fact VGA used for computer video signal input. It is also an analogue transmission.
DVI is a digital video interface which gives the best video signal transmission. As it trasmit digital signal, the loss of data over transmission can be minimised, not like analogue transmission.
HDMI is a digital video and audio interface. It replaces DVI as it transmit both video and audio signal through one cable so it is all in one.
1080, 720, 240 are the vertical lines which can be produced through a TV, monitor, or projector, or a video source can output (e.g. DVD player, game machines, Blur-ray Disc Player, etc). The higher the better as it means that the resolution is higher and the picture will be more detail. With the same lines and resolutions, p is better than i. p means progressive scan and i is interlace. When talking about 1080p, each scan will scan through all 1080 lines, whereas for 1080i, the first scan will only scan the odd number of the 1080 lines, and the next scan will only scan the even number of the lines, so each time there is only 540 lines giving video signal. Although the difference is very small as the scanning is fast, but your eyes will get tired easily when watching 1080i picture.

4. Digital interface means that it transmit digital signal from the source to the other hand. Like mobile phone, digital mobile phone now is better than those analogue mobile phone in the past, HDMI and DVI transmit digital video signal so the data loss is less.

However, they are just for computer and AV products now.5. I said that component is only good among all analogue cable connection, not among all other digital cable. Component is also used in a lot of DVD players.
