或者 all students chose monday as their school open day
但其實許多時，在這情況下，英文都會用prefer
all students preferred monday as their school open day

1) seudent應該係student
2) student要加s (students)
3) choice係名詞，所以唔算係一句完整句子。

可以改成咁：
All students choosed Monday as the open house day.

NOTE：Open house可以解做開放日。

(我覺得用chose 有點怪, 所以用select 。我也建議用 agreed that , 雖然中文的感覺上不似樣, 但有「一起同意」的意思。)

The verb tense is: Choose > Chose > Chosen > Choosing
Choice is a noun.

Basic: All students chose Monday to be the open day.
"Chose" can also be replaced by "picked" or "selected".

A little advanced of saying total agreement is "Unanimous", e.g. : The students unanimously selected Monday to be the open day.

Monday is choosen by all students as the date of Open Day...

This will be better :
