Buy those certified by ATC which is a recognition body to certify the quality of HDMI cable. So most expensive ones will have this recognition. For DVD video output, of course HDMI and component is the best. Some say that HDMI is very clear but on the other hand too digitised. Others say that component cables are more natural but the loss of data over length is higher as they are analogue cables. It all depends on your taste. I myself prefer HDMI more than component cables.
S-video is a rather old interface which is just better than composite cable. Don't try this with your TV if you have HDMI or component interfaces in your TV.
For course, if your TV is just the old CRT TV, the difference between the three is rather small.
