Airbus employs around 57,000 people; while Boeing employs around 156,000 people worldround.

In this kind of mega size corporations there are hundreds of subsidiaries with size bigger than many listed companies in HK. Every subsidiary has different structure and departments so your second question has not straight forward answer.
