其實你所列出的所有油都不含膽固醇,含較少飽和脂肪酸及較多不飽和脂肪酸,這些都是比動物性油脂(例如:豬油)健康的原因‧

但如果你經濟負擔得到,我會建議你選橄欖油,因它所含豐富的單元不飽和脂肪,比其餘3種油更多,有助降低壞膽固醇及增加好膽固醇‧

然而,你仍需配合適當的烹調方法,避免高溫加熱,這樣就就能避免以上營養流失及釋放有害物質‧因此我會建議你先把食物煮熟,才加入橄欖油吃﹐也避免以橄欖油作炸油,更不宜反覆油炸。

當然啦!無論幾好的油,吃得過多都是無益的,適可而止,就最健康‧

介花子油係最差的,美國 FDA 禁止嬰兒食用介花子油,因為有報告指出介花子油會影響動物生長。其實介花子油和一般食用油不同,介花子未經提練是不能食用的,裡面含有 erucic acid,是致癌的,亦會引致維他命 E 缺乏證,就算提練後,還會有 1%-5% 的erucic acid,再加上介花子油除臭過程會產生 trans-fat,總總問題已經令美國食用介花子油的人數大降,供應商只好將它們賣到亞洲。煎炸時還是食用栗米油吧,如果不是高溫煎炸的話,檻欖油是全世界最好的食油。

Good Cooking Oils:

non-hydrogenated soft margarine

Bad Cooking Oils:
Vegetable shortening
