You risk HIGH losing your new job if you want to negotiate a new package after a contract signed.
If your new company is a small one (say only one HR manager in the entire HR department), you may get a new deal with higher pay as you wanted because the new company can't afford to lose you and they have no time to find a replacement.
If your new company is a big one I would confidently say that you will lose your job. Because you made your own wrong judgements (on market salary and on possibility of counter offer), and even worse you are NOT taking the responsibility.
I suggest you to call the new HR manager telling him about the counter offer, AND assure him that you will report to work as per contract signed. DON'T NEGOTIATE A NEW DEAL. Then the HR manager may appreciate your honesty. If his budget allows he may arrange an adjustment after your probation in order to keep you in place. But remember DON'T ask for the probation adjustment. You signed the contract and have losed the opportunity to ask for that.
Just be good and do well at your new job. Managers in big companies are not stupid nor blind. They know underpaid staff will leave and cost them high.
