Really depends on the country he/she come from. Gender is also important....
In general i would say:
1. His/Her home town, anything special? any sightseeing place?
2. Your home town, i.e. Hong Kong.
3. Food. Chinese food and their home country food
4. Chinese 中文. 外國人 usually interested in Chinese character
5. Mainland China, political or non-political (better non-political for 陌生人)
6. Sport. (mainly for man) if come from Europe talk about soccer, if come from US, talk about basketball (NBA), or American football. (just ask them what is it if you know nothing about American football
7. Pop signer / movie (mainly for girl).....
8. TV program like Amercian Idol, 24, CSI, etc.
9. Internet, anything about it but especially Youtube..... :)
10. 成龍..... let 外國朋友們知到. how much we dislike him
