In many Asian cuisines such as Japanese, Chinese and Korean cuisines there are many different kinds of dumplings. They represent the eating cultures of different countries. And now I am going to teach you how to make and cook dumplings.
Let’s start with the wrapping. The flour costs about 3-4 dollars. We add salt into the flour. Gradually we add in cold water until it forms a smooth and elastic dough. A dough is the mixture of the flour, salt and water. Don't add extra water as the dough would be too weak and would not be able to wrap the filling. Then flatten the dough into a 2 inch circle with thin edges. Cover the dough and let it rest for at least 30 minutes. While the dough is resting, prepare the filling. Meat is the main ingredient of the dumplings. There are various kinds of meat, like fish, pork, beef and shrimp. We chop the meat into small pieces and add some soy sauce, salt, rice wine and white pepper to the meat with some chopped vegetables. Stir in only one direction. Next, brush the top side of each wrapper with water. Put 1 tablespoon of the filling into the middle of the wrapper. Fold the wrapper over the filling into a half moon shape and pinch the edges to seal or bring the corners to the centre and twist. Make sure the wrapper is not broken so the filling would not leak.
To cook, bring a large pot of water to a boil. Add the dumplings, giving them a gentle stir so they don't stick together but do not stir them too fast as the dumplings would be broken. Bring the water to a boil, and add 1/2 cup of cold water. Cover and repeat. When the dumplings come to a boil for a third time, they are ready. Drain and remove the dumplings. The whole process is about 15 minutes to 20 minutes. We need to make sure the meat is cooked but the wrappers cannot be cooked for long time because they would be broken. So time management is very important. We can add some salt to season the soup in order to enjoy the soup as well. Besides boiling, we can also pan-fried the dumplings and then dip them into soy sauce or vinegar. This is another way of enjoying them.
For me I prefer the pan-fried dumplings because I find it easier to cook. However it is a little greasy compare with the boiling method.
Dumpling is one of the traditional Chinese food and many people know how to make it. Since the whole process takes at least 3 hours, some people rather buy the machine-made dumplings from the supermarkets. Personally I like to make dumplings from scratch instead of buying those pre-made dumplings because preservatives are added to prolong the shelf life. They could have been sitting in the refrigerator for months and fresh meat flavor is lost.
