材 料 : 1 個椰皇
1/2 瓶鮮奶
1 隻雞蛋白
2 錢雪蛤膏
糖適量

做 法 : (1) 椰皇斬開頂端少許作蓋用,倒出椰水。
(2) 將雪蛤膏浸軟,揀去雜質及飛水撈起,瀝乾備用。
(3) 取 2/3 椰水加鮮奶、蛋白及糖拂勻,倒入椰殼內,蓋上蓋,隔
水大火蒸 廿分鐘後取出供食。

• 鮮奶 - 500毫升
• 蛋白 - 4隻
• 蛋白 - 4隻
• 薑汁 - 2湯匙

1.預熱煤氣焗爐4度(攝氏180度)。
2.鮮奶加熱。
3.蛋白、糖及薑汁輕輕拌勻。將鮮奶慢慢拌入蛋白內,瀘過。轉放耐熱碗內,蓋上錫紙。
4.將碗排放一焗盤內,注入暖水至半滿,入焗爐燉約30分鐘至凝結。
