材料:
雞 200克
薯仔 200克
洋蔥(小) 1個
磨菇 50克
蔥 2棵
獻汁用料:
人造牛油 30克
麵粉 1湯匙
黃薑粉 1/4湯匙
椰汁 75毫升
上湯 150毫升
調味品:
鹽 1茶匙
老抽 1茶匙
胡椒粉 少許
糖 1/2茶匙
酒 1茶匙
製法:
1. 雞斬件,加入調味料醃30分鐘。
2. 洋蔥及薯仔洗淨,切件,蔥切4厘米段,磨菇切片。
3. 燒油1湯匙,將洋蔥、薯仔等材料爆香,用碟盛起備用。
4. 燒油1湯匙,加入蔥段及雞件,炒約3分鐘。
5. 溶人造牛油於鍋內,加入麵粉及黃薑粉,攪勻。徐徐加入上湯,再加上雞件及其它材料,慢火煮約15分鐘。
6. 將以上材料傾入已掃油的耐熱玻璃盅內,再加入椰汁,焗約30分鐘(焗爐4度或攝氏180度)。

Ingredients

Chicken 200g
Potato 200g
Onion (small) 1
Mushroom 50 g
Spring onion 2 sprigs

Sauces

Margarine 30g
Plain flour 1 Tbsp
Turmeric powder 1/4 Tbsp
Coconut milk 75ml
Stock 150ml

Seasonings

Salt 1 tsp
Dark soya sauce 1 tsp
Pinch of Pepper
Sugar 1/2 tsp
Wine 1 tsp


Method

1. Cut chicken into pieces. Season and marinate for 30 minutes
2. Wash and cut onion and potatoes into pieces. Cut spring onion into 4cm in length. Slice mushrooms.
3. Heat 1 tablespoon oil, stir-fry onion and potatoes until fragrant. Put aside for later use.
4. Heat 1 tablespoon oil, stir-fry chicken pieces and spring onion for 3 minutes.
5. Melt margarine, add in plain flour and turmeric powder, stir well. Slowly add in stock, chicken and other ingredients, simmer for 15minutes
6. Pour the above ingredients into a pre-oiled heatproof dish. Add in coconut milk and bake for 30 minutes (Oven 180℉). Dish to serve.
