內臟 > internal organsusually the foreigners will freak out by this term, however this is the only term to use!!
hence "foreign人, 你喜歡食動物內臟嗎"> would you (like to have)/(prefer) animal internal organs (as part of your dish)/ (in the main course)?

內臟: internal organ (single) or internal organs (plural),
OR viscus (single) or viscera (plural).
However, most (or almost all) western people don't eat 內臟 at all (except Fore Gras -- goose liver). If you don't want to scare them away or let them think you are an alien, you better don't ask this kind of question. Haha... :)
