皮：
全麥麵粉，溫水。
餡：
基本的材料：粉絲、香菇、薑末、豆腐干。菜類：芹菜、黃芽、草菇、四季豆、菠菜、芽菜、西洋菜、蘆荀、紅蘿蔔等等，
調味：
麻油、味噌。
其歷史背景::
正月初一吃餃子，在我國北方，幾乎家家如此。這一頓餃子與一年中的其他餃子不一樣。這頓餃子要求除夕晚上包好，半夜十二點開始吃。吃餃子就是為了取"更歲交子"的意思。這個風俗開始於明朝初年，原來"交子"的諧音便演變為"餃子"。 初一破曉，北方人家家戶戶吃餃子，為了討吉利，北方人往往把硬幣、糖、花生仁、棗子和栗子等和肉餡一起包進新年的餃子裏。吃到硬幣的人，象徵新年發財；吃到糖的人表示來年日子更甜美；吃到花生仁的象徵健康長壽等。

history behind having dumplings:
it is a tradition for almost every household on the northern part of my country to have dumplings on the new year's day. this meal of dumpling is different from having dumpling at other occasions. it is because these dumplings are required to be prepared just before the new year's day and people are required to starting eating them from the midnight..... (sorry i don't know what is 更歲交子..) this tradition started from the Ming dynesty, and it was found that the word ''交子'' has the same pronounciation as dumpling! on the new year's day morning, every family in the northern territry have dumplings is to wish for good fortune. people normally put coins, sugar, peanuts, dates, or chestnuts with the filling into the dumplongs. if one eats one with a coin in it, it simbolises he is going to be rich; if one eats the dumpling with sugar in it, then that means that person is going to have a sweet year; those having peanuts with the filling would expect to have a healthy and long life.
