Suppose we lived in an elliptical, rather than a spiral, galaxy. In what ways would our view of night sky be different?

You ask a good question. However, even we really live in a elliptical galaxy, the night sky will not have important difference to our real night sky. It is because when our solar system have almost a zero incline angle to galaxical surface, so we can only see the galaxy from horizontal direction and the optical view of our galaxy is just a dazzling white strip. If we lie on a elliptical galaxy with zero incline angle, then the view of the galaxy will be also from horizontal direction and the same view will be seen.
However, when we using other wavelength to observe the galaxies, the images will be different. It is because EM wave other than optical wave such as microwave and radio wave can penetrate shining stars, so the actual structure of two types of galaxies can be revealed. Actually, we didn't know the shape of our galaxy untill we have radiotelescope to see through the very dence stars and discovered the spiral arms since 1950s.
