if you focus on HK's future demand, I would say it's finance or account stuff. coz account and finance firms always look for ppl who major in these. but this is not a must, coz many ppl major in other things can also join account or finance companies.
For engineering, frankly the prospect is not really good. I heard from my engine-frds saying that in HK engine ppl are all under-paid with too haevy workload. they have to look after both admin work and really engine work. and there aren't so many engine fields in HK. it very difficult to find engineering jobs of the civil, industrial or bilmedical sides as you said.
To be honest, employers in hk dun care much about what you majored in, but your personality, intelligence. if you are presentable, you can actually do everything even you have a very specific major. My frd with maths major is now working in i-bank. sounds quite unrelated but her boss wants her intelligence, not the specific knowledge in finance (which she knows nothing in finance actually). Critical thinking is much important.
