意粉茄醬(Tomato Sauce serves with pasta)
意粉茄醬適合拌與意粉類麵食一同進食 .
材料: 洋蔥一小個 蒜頭2粒
V8 蔬菜汁200ml 糖2茶匙
茄膏 2湯匙 鹽及胡椒粉各半茶匙
香草半茶匙 橄欖油一湯匙
將洋蔥及蒜頭去衣切幼 , 燒熱深鍋下橄欖油 , 洋蔥及蒜茸炒勻爆香 . 再加入V8、茄膏、香草、糖等材料拌勻 , 轉調慢火煮至醬汁濃稠 . 再加入鹽及胡椒粉調味 , 即可伴與意粉撒下Parmesan cheese 一起進食 .
*意粉茄醬可加入免治牛肉150g 煮醬 , 即成肉醬意粉中的茄汁肉醬 .
香辣茄醬(Spicy Tomato Sauce)
香辣茄醬適合伴與雞扒,炸薯或炸魚等一同進食.
材料: 橄欖油 1 湯匙( Olive Oil ) 洋蔥粒 1/4 杯 ( Onion,chopped )
蒜茸 1 湯匙 ( Garlic ,grated ) ( 乾 )白酒 60ml( Dry WhiteWine)
蕃茄茸半杯 ( Tomato Pur'ee ) Tabasco 1 湯匙
茄膏 1 湯匙 ( Tomato Paste ) 甜椒粉 1 湯匙( Paprika )
辣椒茸半茶匙( Chili ) 香芹碎少許 ( Parsley, chopped )
燒熱平底煎鍋下橄欖油燒熱,下洋蔥粒用中火炒 2-3 分鐘,加入蒜茸,甜椒粉、辣椒茸炒勻,注入白酒、蕃茄茸、茄膏用中火邊煮邊攪拌,煮至醬汁濃厚撒下香芹碎拌勻即成.
洋蔥汁(Onion Sauce)
洋蔥汁適合拌與豬扒、香腸、雞扒等一同進食.
材料: 洋蔥 1 個( Onion, sliced ) 黑胡椒碎少許( Ground Black Pepper )
蒜茸 1 湯匙 ( Garlic ,grated ) 清雞湯 1 杯 ( Chicken Stock )
橄欖油 2 湯匙 ( Olive Oil ) 麵粉 2 湯匙 ( Flour )
將洋蔥去皮切條,燒熱煎鍋下橄欖油 2湯匙,加入洋蔥條及蒜茸炒勻,大火兜炒至微微金黃色,加入麵粉及黑胡椒碎炒勻下清雞湯,轉調中火煮至汁液濃郁下少許鹽調味即可.
焗豬扒飯
材料:
豬扒(連骨)4塊(約300克)
洋蔥1個
蕃茄1個
白飯2碗
雞蛋3隻
麵粉50克
油4湯匙
汁料:
茄汁4湯匙
美極2茶匙
喼汁1茶匙
砂糖1湯匙
清水2湯匙
鹽1/4茶匙
美國辣椒汁數滴
1. 洋蔥切成幼條,蕃茄切開八件。打散雞蛋成蛋液,加1/4茶匙鹽拌勻;
2. 中大火燒熱平底鍋,加2湯匙油,注蛋液入鍋中炒至七成熟,再加入白飯,與盛於烤盤或任何耐熱的盤子中;
3. 將豬扒沖淨後用布抹乾,用刀背將豬扒肉兩面交叉剁鬆。用鹽及胡椒粉調味,即可沾上麵粉及用中火加2湯匙油將豬扒煎熟;
4. 煎好豬扒後取出,切成兩公分闊條,排放在炒飯上;
5. 在同一個平底鍋上,用餘下的油將洋蔥及蕃茄炒約一分鐘,然後將拌勻的汁料注入,燒沸後,淋在豬扒飯上。這時可放入已預熱190C的焗爐內,焗10-15分鐘即可供食。
ingredients:
4 pieces of pork (with bones)(about 300g)
1 onion
1 tomato
2 bowls of cooked rice
3 eggs
50g of flour
4 spoons of oil
sauce:
4 spoons of ketchup
2 teaspoons of soy
1 teaspoons of 喼汁
1 spoon of sugar
2 spoons of plain water
1/4 teaspoon of salt
1.cut the onion into slices, divide the tomato into eight equal potion. Break the eggs and add 1/4 teaspoon of salt into it and stir it well.
2.heat the wok and add 2 spoon of oil. Pour the mixture of egg and salt into the wok and fry it to about 70% cooked. Add in the rice and put them onto a plate.
3.wash the pork and dry it with a cloth. Use the back of the knife to make the pork soft. Season it with salt and pepper. Flour the pork. Add two spoon of oil into the wok and fry the pork since well-done.
4. after frying the pork, cut it into slices and place them onto the fried rice.
5. Fry the tomato and onion with the remaining oil for about 1 min. Then pour in the sauce. Pour it onto the fried rice and the pork after boiling. Put the plate with the fried rice and the pork into a oven which was preheated190C. you can have your meal after baking 10 to 15 mins.
