"wun chai chi" (small bowl shark fin) does not use real shark fin but it did origins from the real one. in 40s and 50s, the street vendors near temple street used those so-called "chou shui" which means the unwanted remained shark fin from restaurants to make this very popular street snack in Hong Kong. as "wun chai chi" was sold in street vendors in small bowls, there comes its name. many people like mixing wun chai chi and fish meat together, so finally they have become one of the most popular matches in HK snacks.
