Egg Salad Sandwich Recipe

INGREDIENTS:
2 hard-boiled eggs
1 teaspoon minced onions
1/8 teaspoon celery seeds
1/8 teaspoon Dijon mustard
1/4 cup shredded lettuce
2 tablespoons mayonnaise (I like Helmans)
2 slices bread
butter
1 dash salt and pepper

PREPARATION
Finely chop hard boiled eggs with a pastry blender or knife and fork.
add onion, celery seed, dijon, mayo, and lettuce and mix well.
butter each slice of bread, top with egg mixture, sprinkle with salt and pepper, seal sandwich and enjoy.
Makes 1 sandwich


Ham Salad Sandwich

INGREDIENTS:
2 cups finely chopped cooked ham
1/2 cup finely diced celery
1 teaspoon grated onion
1/3 cup mayonnaise
1 scant teaspoon prepared mustard
12 slices bread
butter for bread, optional

PREPARATION:
In a medium bowl, combine ham, celery, onion, mayonnaise, and mustard. Lightly butter the bread slices, if desired. Spread 6 slices of bread with even portions of ham salad mixture.
Makes 6 ham sandwiches.



Tuna Salad Sandwich Recipe

INGREDIENTS
1 can of tuna fish packed in olive oil (do not drain the oil)
1/3 cup of cottage cheese
2 Tablespoons of mayonaise
1/4 purple onion, chopped finely
1 celery stalk, chopped finely
1 Tablespoon of capers
Juice of half of a lemon
Pinch or two of dill
2 Tbsp minced fresh parsley
1 teaspoon of Dijon mustard
(optional - lettuce and sliced tomatoes)
Slices of French bread, lightly toasted

PREPARATION
Mix all of the ingredients. Be sure not to drain the olive oil from the can of tuna. Use it instead in the tuna salad mixture. Serve on toast, either open faced, or in a regular sandwich with lettuce and tomatoes. For a low carb option, serve on sliced lettuce.

Egg Salad Sandwich

Ingredients:
4 hard boiled eggs, peeled
1 TBSP. fat-free mayo
1 TBSP. Mustard (I felt this was too much)
1/2 stalk celery, sliced
1/4 red pepper, chopped
1 tsp. sweet pickle relish
1 TBSP. fresh parsley
1 slice whole-grain bread
1 lettuce leaf (I omitted)
1/4 Avocado, sliced (didn't have)

Directions:
(1) Chop ONE WHOLE egg. Then DISCARD the YOLKS from the 3 other eggs and chop the whites.

**I actually just had five whole egg whites and threw out all the yolks***

(2) In a bowl, combine, eggs, mayo, mustard, celery, peppre, relish, and parsley.

(3) Toast bread and top with lettuce, egg salad, and avocado slices.
