Poached Beef Slices 白灼肥牛肉
Ingredients
hot pot beef slices 1 lb
scallion 1 pc
red pepper 1 pc
ginger 2 slices
wine 1 tbsp
Seasonings
oyster sauce 3 tbsp
light soy 1 tbsp
sesame oil 1 tbsp
sugar 1/2 tbsp
vinegar 2 tsp
Method
1. Defrost beef, separate any slices sticking together.
2. Shred scallion, ginger and chili pepper, soak in water.
3. Bring half pot of water to a boil, add wine 1 , blanch beef until the meat changes color, remove, drain, place on a serving plate.
4. Remove shredded scallion, ginger and chili pepper from the water, line on top of beef. Combine all the seasonings in a mixing bowl, mix well. and drizzle on beef. Toss well before serving.
Stir-fried Beef with Kale 芥蘭炒牛肉
Ingredients
kale 10 oz
beef 5 oz
ginger 3 slices
Seasonings
light soy 1/2 tbsp.
sugar 1/2 tsp
pepper pinch
cornflour pinch
Sauce
light soy 1 tsp
sugar 1/2 tsp
water 2 tbsp
wine 1 tsp
Method
1. Slice beef and marinate with seasonings.
2. Heat somoe oil and soak beet slices until done. Take out and drain.
3. Rinse kale and section. Then blanch with pinch of salt and oil in water until done. Take out and drain.
4. Put in beef slices, ginger, kale and sauce. Stir well. Dish up and serve
Pork Chop with Tomato 蕃茄豬扒
Ingredients
tomatoes 4 pcs
sliced pork chop 4 pcs
scallion 1 stalk
Seasonings
1.
wine 1/2 tbsp
light soy 1/2 tbsp
sugar 1 tsp
cornflour 1 tsp
pepper pinch

light soy 1 tbsp
salt 1/4 tsp
sugar 1/2 tbsp
cornflour 1 tbsp
water some
tomato ketchup 2 tbsp
Method
1. Rinse tomato, score with a cross, blanch in boiling water, remove, peel off skin, slice.
2. Rinse sliced pork chop, marinate in seasoning (1) for a short while; cut scallions in small sections.
3. Heat 2T. oil, fry sliced pork chop until done, remove the pork, use the remaining oil to stir-fry scallion sections and tomato slices.
4. Return sliced pork chop and add seasoning (2), stir well. Ready to serve
Steamed Pork and Salted Fish
咸魚蒸肉餅
Ingredients
ground pork 10 oz
salted fish 1 slice
shredded ginger 1 tbsp
Seasonings
light soy 1 tsp
sugar 1/2 tsp
wine 1 tsp
cornflour 1 tsp
pepper pinch
sesame oil dash
Method
1. Rinse sliced salted fish and debone. Diced.
2. Mix diced salted fish, seasonings and ground pork well.
3. Put shredded ginger over the ground pork.
4. Steam ground pork over high heat for about 15 minutes. Serve.
Fried Pork With Tomatoes and Beancurd
蕃茄豆腐炒肉粒
Ingredients
tomato 2 pcs
beancurd 1 pc
lean pork 5 oz
ginger 1 slice
Seasonings

cornstarch 1/2 tsp
light soy 1 tsp
sugar 1/2 tsp
pepper pinch

ketchup 1 tbsp
sugar 1 tbsp
light soy 1 tbsp
wine 1 tsp
salt 1/2 tsp
water 2/3 cup
Method
1. Wash tomatoes, remove stalks, dice.
2. Clean and dry beancurd and dice.
3. Dice pork. Marinate with seasonings 1. for 20 minutes.
4. Heating oil, put the pork in to fry thoroughly, add tomatoes and beancurd and stir-fry, add seasonings 2. and bring to boil. Stir cornstarch solution in for serving.
Winter Melon and Ham Soup 雲腿冬瓜湯
Ingredients
chinese ham 1 oz
winter melon 1.4 lb
chicken coup 1 can
Method
1. Cook ham well, and slice it when cool.
2. Peel winter melon and remove seeds and soft pulp and then cut into small pieces.
3. In pot put in ham and chicken soup, add in 3 cups of water and bring to boil. Cook for 10 minutes, and put in winter melon pieces. Cook until winter melon is soft, then sprinkle with some pepper.
