Fried Seafood Udon海鮮炒烏冬
Ingredient:Shrimps 60 grams, Squids 50 grams, Clams 30 grams, Cuttlefish 40 grams, Udon 2 packs (A) Olive oil 3 tablespoons, Garlic (chopped into slices) 3 pieces, Chilies 1 piece

Cooking Method:
1. Remove the intestine in the shrimps. Chop the squids and cuttlefishes into small pieces. Then blanch them in a pot of hot and salty water.
2,Use low heat to cook A until it turns light brown color. Extract the oil out as sauce.
3,Heat up the sauce oil in 2, fry the udon and add in shrimps, squids, cuttlefishes, clams and B until they are dried.

Sweet and Sour Spareribs with Vegetable Rice - Shanghai Style上海糖醋排骨菜飯
Ingredients:Spareribs - 400g、Chopped garlic - 1 tbsp、Cooked rice - 3 cups、Shanghai Pak Choi (chopped) - 200g、Water - 1 cup、Brown vinegar - 1/2 cup、Shaoshing wine - 1/2 cup、Light soya sauce - 1/4 cup、Dark soya sauce - 1/4 cup、Sugar - 1/2 cup
Method:
1. Chop spareribs into 7cm sections.
2. Heat 2 tbsps of oil, saute garlic until fragrant, add sauce and bring to the boil. Lower spareribs and simmer for 45 minutes until tender.
3. Heat 2 tbsps of oil in wok, stir-fry Shanghai Pak Choi for a while, mix with 1/2 tsp of salt, remove and drain.
4. Heat another 2 tbsps of oil in wok, stir-fry rice with vegetables, season with 1/2 tsp salt mixing well. Transfer to a rice bowl.
5. Lastly bring sauce and spreribs to the boil reducing sauce by half. Serve hot with vegetable rice.
Blue Berry Cake 藍啤梨牛油蛋糕
Ingredients: Butter 600g, Sugar 600g, Egg 10 pieces, Flour 600g, Root powder 150g, Yeast 15g,
Fresh blue berries 250g, Pal Sweet Appropriate portion
Method:
1. Mix butter and sugar into white color.
2. Separate the eggs into three portions. Mix each portion with the butter and sugar mix.
3. Then add in the pre-mixed flour, root powder and yeast.
4. Then add in the fresh blue berries.
5. Place the above in a buttered cake baker.
6. Place in an oven with 180c. Bake for 25 minutes.
7. When the cake is baked, let it cool down. Then sprinkled with Pal Sweet for decoration.
