Cart noodle is a kind of à-la-carte noodle that is popular in Hong Kong. At the very beginning, sellers of cart noodle, a generally cheap food, are hawkers who owned a wooden cart, hence the name. As a kind of "street stuff" sold by hawkers operating on dusty roadsides, it was once called "nasty noodle" (嗱喳麵).
One can order different types of noodles with different toppings. The availability of different kinds of noodles and toppings varies from stall to stall. Some common toppings are:
Pig blood curds (豬紅)
Pig intestine (豬大腸)
Pig skin (豬皮)
Chinese radish (蘿白)
Red chinese sausage (紅腸)
Vegetables
Chicken wing (雞翼)

Thin Noodles or Wonton Noodles (yau meen or won ton meen; 雲吞麵) - similar to Thick Noodles, but thinner
E-Meen (e meen; 伊麵) - light yellow, flat, and chewy
Udon Noodles (woo dong; 烏冬) - Japanese noodles that are white and thick
