Ingredient:Shrimps 60 grams, Squids 50 grams, Clams 30 grams, Cuttlefish 40 grams, Udon 2 packs (A) Olive oil 3 tablespoons, Garlic (chopped into slices) 3 pieces, Chilies 1 piece
(B) Oyster sauce 2 tablespoons,

HON-DASHI 1/2 teaspoon, Hot water 1/2 cup, Coriander a little
Cooking Method:1. Remove the intestine in the shrimps. Chop the squids and cuttlefishes into small pieces. Then blanch them in a pot of hot and salty water.
2,Use low heat to cook A until it turns light brown color. Extract the oil out as sauce.
3,Heat up the sauce oil in 2, fry the udon and add in shrimps, squids, cuttlefishes, clams and B until they are dried.
4,Now can be served and use coriander as decoration.
Japanese Fried Bean Curd.....日式炸豆腐...http://www.ajinomoto.com.hk
Ingredient:Bean Curd 1piece, Seaweed 1sheet, Plum meat 1/2 teaspoon, Hot chili sauce 1 teaspoon, Flour Appropriate amount
Sauce for Seaweed:Soy sauce 1 tablespoon, Rice wine 1 tablespoon

HON-DASHI 1 teaspoon, Water 3/4 cup, Soy sauce 2 tablespoon,
Vinegar 1 tablespoon
Cooking Method:1. Cut the bean curd into four big pieces¡Athen empty the inside.
2,Boil the condiments and leave it cold.
3. Soak the seaweed in the seaweed sauce, use low heat to boil until the sauce becomes dry, leave it cold then mix with plum meat and hot chili sauce.
4,Stuff the seaweed mix inside the bean curds¡Acover it with bean curd grains and flour. Fry them in oil with mid-fire. Leave them dry then shower with condiments and chopped shallots.

Ingredient:(5p.)900cc water、30g niboshi(small dried sardines = dashi)魚干、about 30 half-inch cubes tofu、wakame seaweed (dry or fresh)、2 stalks green onions, chopped、4-5 tablespoons miso (adjust to taste)
Cooking Method:1. Remove head and gut of niboshi.Soak niboshi in a bowl of 900cc water more than 30 minutes.Boil water and niboshi 3-5 minutes
2. Remove niboshi and add miso and dissolve completely
3. Add tofu and wakame seaweed, simmer gently about 3 minutes.
4,Turn off the heat and add chopped green onions, then serve.
P.S.You can purchase the fish stock(niboshi) at any Japanese super market.The miso flavor will weaken if you overcook the miso.
