Conductivity

milk is complicated mixture, it contian many ingredients, so we need to charify what changed occured after the milk was defatted.

I guese:
milk contain protein which can conduct electricity as a form of ion, and when the milk contain fat, the protein will hold the fat as a emulsion, due to this big size of the emulsion miscelle the moblity of the protein is lower--- this means lower conductivity!!

because whole milk has more H+ then skim milk due to the concentration of fatty (acid
