廣式炒飯

3 cups: White Rice - uncooked (any brand)
2 cups: Carrots and peas (Pre-diced)
2 cups: Celery (diced)
3 - Eggs (scrambled)
3 - Chinese Sausages (diced)

Sauce:
3 tsp: Sugar
3 tbsp: Cooking wine
3 tsp: Sesame oil
2 tbsp: Minced ginger
2 tbsp: Minced garlic
2-3 tbsp: Green onion

1-2 tbsp: Light Soy sauce
1 tbsp: Oyster sauce
1 tbsp: Chee Hou Sauce
1 tbsp: Chicken Marinade - Teriyaki
2-3 tbsp: Regular cooking oil
3 tsp: Lightly roasted white sesame seed
米 3杯
紅蘿蔔和豌豆 2杯
芹菜 2杯切丁
蛋 3個煮成散蛋
中式香腸 3個切丁


調味料:
糖 3tsp
酒 3tbsp
麻油 3tsp
薑末 2tbsp
蒜末 2tbsp
蔥 2-3tbsp
醬油 1-2tbsp
蠔油 1tbsp
Chee Hou Sauce 1tbsp
Chicken Marinade-Teriyaki 1tbsp
沙拉油 2-3tbsp

*作法

1. Dice the vegetables and Chinese Sausages into bite sizes.
將所有的蔬菜和香腸切成丁

2. Cook the rice the day before. Spread the rice out to dry in a pan (very important) so that when cooked the rice is not wet/moist/sticky
米在前一天就將之煮好,並將它撥平放在一個盤子上讓他略微乾燥,這個動作非常的重要,可以避免炒飯時米過濕且黏在一起

3. Put oil into wok
將油放在炒鍋裡面

4. Add ginger and garlic once oil heat up; cook until golden brown
油熱後爆香薑和蒜頭

5. Add the vegetables into wok and cook for 5 minutes
加入所有的蔬菜炒大概五分鐘

6. Add the rice into wok and cook for 5 minutes; mix the rice well with the vegetables

7. Add the sauce (pre-mixed) and mix everything well

8. Add scrambled eggs and cook everything for 1 to 2 minutes

Mexican Fried Rice w/Seafood(墨西哥海鮮炒飯)
Ingredients:
6 Scallops
6 Prawns
6 Mussels
6 Grouper
2 pcs crabmeat
2 bowl cooked rice
1/4 cup corn
1 tbsp butter
1/3 cup diced red pepper
1/3 cup diced green pepper
1/2 cup chopped tomato
1/2 cup chopped onion
1/4 cup red kidney beans

Seasonings: Some salt & a pinch of pepper
Method: (1) Rinse all seafood wipe dry and add seasonings, marinade for a while.
(2) Rinse & scald seafood, drain well.
(3) Heat 1 tbsp butter saute onion, tomato, seafood, red kidney beans, corn, green & red pepper until fragrant and then stir in the cooked rice with seasonings and cook thoroughly over high heat. Serve hot.

Fried Rice in Western Style(西炒飯)
Ingredients:
50g Shrimp
2 bowl rice
1 Egg
2 tbsp green pea
1 tbsp tomato paste
50g ham (dices)
2 tbsp sweet corn
1/4 Onion (diced)
1 Tomato (diced)

Seasonings: Some salt & a pinch of pepper
Method: (1) Rinse the shrimp. Add marinate with seasonings. Poach the green pea. Drain.
(2) Bring the oil to boil. Saute the onion, tomato, sweet corn, ham & green pea.
(3) Beat the egg. Fry the rice with egg. Then, add in tomato paste & the ingredient (2).

Nasi Goreng(印尼炒飯)
Ingredients:
1 Egg
4 Chicken wings
25g Shrimp
10g Bean sprout
25g Chicken shred
10g Cucumber dices
2 pcs shallot
1 tbsp onion dices
1/2 pcs red perennial chilli (dices)
1 tbsp sweet soy sauce (Indonesian)
Some butter & spring onion dices

Seasonings: Some salt & a pinch of pepper
Marinade : 1 tbsp oil
1/2 tsp sugar
1 tbsp fish sauce
A pinch of pepper

Method: (1) Remove the skin from the shallot. Cut it into pieces. Deep fry it. Marinate the chicken wings with marinade for 15 mins. Marinate the shrimp with salt. Then, fry with chicken shred. Fry the rice as well.
(2) Bring the oil to boil. Then, sautee the onion, chilli & pour in rice. Then, add chicken shred, shrimp, bean sprout & sweet soy sauce. Put it on the dish.
(3) Cook the chicken wings & put it on the side of dish. Egg was fried sunny side up with salt. Then, sprinkle with deep-fried shallot & garlic.

Fried Rice in Fujian Style(福建炒飯)
Ingredients:
2 bowl rice
1 Egg
25g Shrimp
25g Straw mushroom
25g Roast duck (shredded)
25g Chicken (dices)
1 tbsp green pea
1 tbsp sweet corn
1 tbsp carrot (dices)
1 Dried scallop (soak)

Sauce: 1/2 tsp sugar
1 tbsp oyster sauce
300 ml chicken stock

Thickening: 1 tbsp water
1 tbsp cornstarch

Method: (1) Rinse the shrimp. Cut into pieces. Wash the straw mushroom. Then, poach the straw mushroom, green pea & carrot. Tear the dried scallop into shred. Bring the oil to boil. Saute the chicken & shrimp. Set aside.
(2) Beat the egg. Fry the egg until half done. Then, pour in the rice, eason with salt. Place to the dish.
(3) Boil the sauce ingredients. Then, add straw mushroom, green pea, carrot, dried scallop, roast duck, chicken, shrimp & sweet corn. Then, turn the heat to low, add the thickening. Pour it onto the rice.

Fried Rice w/Minced Pork & Nori(日式紫菜肉碎炒飯)
Ingredients:
1 bowl cooked rice
(1 portion)
1/2 tbsp chopped garlic
4 tael minced pork
2 tbsp thinly sliced nori

Seasonings: Some salt & a pinch of pepper
Method: (1) Marinate pork with seasonings.
(2) Saute garlic. Add pork & stir well. When pork is cooked, add rice & fry until it does not crumble. Stir in pine nuts & season with salt. Remove from heat & sprinkle with nori.

STIR-FRIED RICE WITH FINE SHRIMP SAUCE....銀魚蝦醬炒飯...
Ingredient:Cooked rice 150 g [5 oz/about 1 cup], Chicken meat 50 g [2 oz] [diced], Bell pepper 50 g [2 oz] [diced], Fried silver fish 1 tbsp, Egg 1 [beaten], Shredded green onion for topping
Seasoning mix:Fine Shrimp Sauce 1 tbsp蝦醬
Cooking Method:1. Saute Lee Kum Kee Fine Shrimp Sauce in 1 tbsp oil. Add chicken and stir-fry until done.
2,Add bell pepper, cooked rice and stir well until heated through. Stir in fried silver fish.
3,Pan-fry the egg into a thin egg sheet. Put on a serving plate.
4. Put fried rice on one side of the egg sheet. Fold egg sheet to cover the rice. Sprinkle with shredded green onion. Serve
Stir-fried egg whites and shallot w/ oyster sauce.....乾蔥蛋白炒飯
Ingredient:Cooked rice 400 g [14 oz], Shallots 4 [sliced], Green onions 2 [sectioned], Egg whites 4 [beaten]
Seasoning mix: Premium Oyster Flavored Sauce 2.5 tbsp...(舊庄特級蠔油)
Cooking Method:1.Heat 2 tbsp oil. Saute shallots and green onions until fragrant.
2. Add egg whites and stir-fry until half done. Stir in rice, seasoning mix and heat through.Serve

Fried rice with brassica cernua and dried shrimp.....雪菜蝦米炒飯



Ingredient:(per person)Rice 1 1/2 cups, Dried shrimp 10 grams, Japanese Shimeji mushroom 50 grams, Garlic 20 grams, Brassica cernua 20 grams, Sesame oil 1 teaspoon, Grated garlic 1/4 teaspoon,

HON-DASHI 1/2 teaspoon, Soy sauce 1/2 teaspoon, Fried sesame 1 teaspoon, Japanese pea sprouts A little, Shredded garlic A little, (by using the white part of Garlic)

Cooking Method:1,Sprinkle some water onto the dried shrimp. Heat it by using microwave oven (500W) for 30 seconds.

2,Cut Japanese Shimeji mushroom into sections with 5mm. Shred garlic and brassica cernua.

3,Put 1) and 2) into a microwavable container. Heat it for 1 minute 30 seconds (Don't cover with cling wrap).

Ingredients (for 2 persons):Beef (for grill) 100 grams, Mushrooms 3 pieces, Japanese maitake mushroom 1/4 box, Garlic 1 piece, Plant oil 1 tablespoon, Warm rice 2 cups, Lettuce 3 slices, Aji-Shio-Salt a little, Aji-Shio-Pepper a little
(A) Wine 1 tablespoon, Soy sauce 1 1/2 tablespoons,

HON-DASHI 1/2 teaspoons
Preparation:a,Slice the beef into sticks;b,Slice the mushrooms into thin pieces;c,Divide the Japanese maitake mushroom into several small portions;d,Chop the garlic into slices and remove the centre parts;e,Shred the lettuce
Method:1,Heat oil, sauteed the garlic slices until golden, add a, b, c and stir fry. Then pour in ingredients (A )and fry again until dry.
2,Add in the warm rice and fry until it is dry. Then add e and stir fry well. Use salt and a pinch of pepper as seasonings.
