There will be two reasons for people want to drink a lot of water after the exercise...
First, during exercise, we will lose a lot of water by sweating in order to lower our body temperature, so that we can maintain a constant body temperature.
Second, we will breath more frequently in order to take in more oxygen during the exercise (to increase the respiration rate) and after the exercise(break down lactic acid). When breathing out the air, the air will carry some water from the respiratory surface. In this way, water will be lost from the body. (But, this is a minor reason when compare to the above one)
