If you are going to Aussie only for a holiday, you can use HK license to drive (can use for 3 mth). I think you may pick up a car from the airport right? Actually you can pick up a hire car in Mel then drive to Syd and drop of there. Also the driving time from Mel to Syd is around 10-12 hours, of cause you need to stop every 2 hours. It keep yourself awake, otherwise you will fall to sleep easliy. I did drive 2 times from Sdy to Mel round trip. There are some petrol station you can stop over to get a coffe or food. As long as you keep yourself awake, you do not need to somewhere to sleep. Unless you want to stay for the view and enjoy the country feeling.

However you can stop over in Baron Bay, Canberra. It is nice there, if you like fishing, you should stay in Baron Bay or Wollogong. near Canberra it has some wineyard there, but they are not the big one. If you want the large wineyard, you might try to go to Hunter Valley. Abt 2 1/2 hrs drive from Syd, plenty good wineary in there, Rosemount, McLaren.....etc they are big and you can stay over night in some wineyard. But remember do not drink and drive, plenty police around that area.

Drive around in Aus is the best thing, you can see a lot. Anyway enjoy your trip, and you will have lot of fun, good luck.

The need to change your overseas driver licence to a Victorian driver licence depends on whether your stay in Victoria is permanent or temporary.

If you are in Victoria on a temporary visa, you can drive on your overseas licence (provided it is a current, valid licence) for an indefinite period provided your overseas licence is in English (or you have an English translation), or you have an International Driving Permit.

If you are in Victoria on a permanent visa, you can drive on your overseas licence for only three months from the date you entered Victoria or from the time a permanent visa was issued to you. If you want to continue to drive in Victoria after that time you must apply for a Victorian driver licence.

I guess you hold a temporary visa right, so you can use HK/UK drivers license.
I dont know any place for stay as I am not from Melbourne.

But there are some websites which might help you.
