椰香南瓜湯  (Pumpkin in Coconut Soup)

  小貼士

  南瓜本身已帶甜味,故不用多加調味。另由於椰汁冷凍後會凝固及容易變質,故椰汁的份量應按每次的需要而決定。

  材料 Ingredients
南瓜(去皮、切角)175克
椰汁225ml
乾(烤至輕微變色)4個
鹽1茶匙
黑胡椒粉1/4茶匙
(切碎)3棵
雜菜湯(1.2升)﹕
洋1個
甘筍2個
芹菜2棵
芫荽少許
黑胡椒子少許


pumpkin(peeled, cut into thin wedges)175g
coconut milk 225ml
small shallot(grilled until lightly coloured) 4
salt 1tsp
ground black pepper 1/4tsp
spring onion(finely chopped)3stalks
Vegetable Stock(1.2L)﹕
onion 1
carrot 2
celery 2stalks
coriander little
black peppercorn little


做法 Method
1. 煮滾1.5升水,加入雜菜湯材料煮滾,轉慢火煮至湯水剩下約八成,隔去材料。

  Boil 1.5L water. Put in all vegetable stock and bring to boil. Turn to low heat and boil until stock left is about 80% in volume. Sieve all ingredients.

  2. 加入南瓜拌勻,將湯水煮滾,轉慢火。
 Add pumpkin and stir well until the liquid is boiled. Lower the heat to a simmer.

  3. 加入椰汁、乾、鹽及黑胡椒粉,拌勻,待湯水再滾,南瓜應該已熟透。拌入,將湯放進暖湯碗中即成。

  Add the coconut milk, shallots, salt and pepper and stir well. Bring back to the boil. The pumpkin should be cooked. Stir in the spring onions, turn into a warmed tureen and serve.

材 料:

  A、南瓜600g、洋芋(馬鈴薯)150g、紅蘿蔔200g(去皮切片)。
  B、鮮乳1,000cc、高湯1,000cc、鹽少許。
做 法:

  1、先將材料A和2/3的高湯一起煮熟,稍涼後用果汁機打勻。
  2、將鮮乳和剩餘高湯倒入A,煮滾後以少許鹽調味即可。

什菜南瓜湯


材 料 : 750 克南瓜
1 公升上湯
1 塊薑 (磨成茸)
1 條西芹 (切粒)
1 個大洋荵 (切粒)
1 個薯仔 (去皮切粒)
1 條紅蘿蔔 (去皮切粒)
鹽、胡椒粉、鮮忌廉及芫荽各適量

做 法 : (1) 將南瓜去籽後切大件,用微波爐煮熟或蒸熟,待涼後去皮。
(2) 將少許牛油放入煲內加熱,加入洋荵炒大約一分鐘,再放入薯
仔、紅蘿蔔及西芹炒香。
(3) 將薑茸及雞湯加入煲內,待湯滾後轉慢火煲約廿五分鐘。
(4) 將薑茸隔掉,加入煮熟的南瓜件,用攪拌機攪成幼滑糊狀,以
鹽及胡椒粉調味,可加入適量水份來調校湯的濃度。
(5) 待上桌時再翻熱,將湯盛入碗內加入一湯匙鮮忌廉及以芫荽作
裝飾即成。

南瓜   1斤
排骨   12兩
蒜頭   2-3粒

做法

南瓜去皮洗淨切塊,排骨洗淨。
南瓜及、排骨及蒜頭放煲內加適量水,煲2小時,加鹽調味即成。

INGREDIENTS:
1 large onion, diced medium
3 stalks celery, diced medium
2 carrots, diced medium
1 large leek, diced medium
2 cups pumpkin, fresh, cooked or canned
6 cups vegetable broth
1/2 teaspoon cumin powder
1/2 teaspoon cinnamon
pinch of clove
pinch of nutmeg
salt, to taste
1cup soy milk, rice milk, or half and half
PREPARATION:
1. Add the first 11 ingredients into a stock pot over medium high heat.

2. Bring to boil and reduce to simmer.

3. Simmer for 30 minutes and remove from heat.

4. Let cool for 15 minutes.

5. Puree soup in blender and return to pot.

6. Finish with soy milk and season to taste.

Stuffed tomato with pumpkin soup 蝦膠番茄盅伴南瓜湯......(第710期壹週刊)

Ingredients: 300g fresh shrimp paste .........1 beef tomato
....................100g pumpkin ........................1 cup of fine stock
....................1/2 tsp chopped rosemary ......1 water chestnut
Seasoning: pinch of salt and pepper
Method: 1. Shell and devein shrimp. Rinse and drain. Press shrimp with the back of a chopped, mix well with seasoning and chopped rosemary until sticky.
2. Cut cap off from tomato. rinse and slit a cross at the bottom of the tomato. Blanch in boiling water for 10 seconds. Take out and let cool in ice water. Skin off and scoop seeds out. Stuff with shrimp paste. Steam for 5 minutes. Dish up.
3. Remove skin and seeds from pumpkin. Cut into dices. Steam until cooked. Place pumpkin and fine stock in an electrical blender, blend until smooth. Bring pumpkin soup to boil. Pour soup into dish.

Pumpkin and Frog Soup 田 雞 南 瓜 湯 (第794期壹週刊)
Ingredients: 2 no. Frogs ..................320g Pumpkin ........10 no. Garlic Clove
....................2 stalk Spring Onion.... 5 cups Water
Seasoning: Pinch of salt
Method:1. Wash and cut frogs into pieces, water blanche.
2. Clean pumpkin, remove skin of garlic clove.
3. Boil water, add all ingredients and cook for 1/2 hour.
4,Add seasoning, serve hot.

南瓜湯

南瓜湯(4小碗)

材料:
南瓜 半個(約800克)
上湯(或罐頭清雞湯) 2 2/1 杯
水 1/2杯
油 1湯匙
乾葱頭 3粒
蒜頭 2瓣
鹽及胡椒粉 適量

做法:
1. 南瓜洗淨外皮,挖去瓤和籽,切成大塊,放入有蓋耐熱玻璃大盅內,加水1/2杯,
加蓋,放入微波爐內大火加熱15分鐘,移出擱涼
2. 乾葱及蒜頭切薄片
3. 用湯匙將南瓜肉刮出,與汁一同留用
4. 湯鍋置於中火上,下油爆香乾葱和蒜,加入南瓜肉,再倒入上湯,
煮滾後,再煮5分鐘,下鹽及胡椒粉調味,移鍋離火,擱置10分鐘
5. 將南瓜湯全部傾進攪拌機內,加蓋,高速攪打2分鐘成稠滑之南瓜濃湯,即可

忌廉南瓜湯
材料
南瓜500克
忌廉400ml
上湯/水 1000ml

製作
1.把南瓜去皮切片,用橄欖油炒香,加少許上湯煮爛。
2.把南瓜攪爛至茸,回鍋加餘下的上湯煮滾,加忌廉拌勻,煮沸即收火。
3.加鹽及胡椒調味

INGREDIENTS
4 1/2 pounds sugar pumpkin
2 cups chicken broth
1 cup heavy cream
salt and pepper to taste
1 dash ground nutmeg
4 cups seasoned croutons

DIRECTIONS
Cut the top off of the pumpkin and remove the seeds and strings. Carve out the flesh of the pumpkin until the shell is about 1/2 inch thick. Be careful not to make any holes in the skin - the pumpkin is the serving bowl. Steam the pumpkin flesh in a saucepan with an inch of water, over medium heat for 20 minutes. Remove from heat, drain and set aside to cool slightly.
In a saucepan over medium heat, cook the chicken broth until warm. Puree the pumpkin flesh and gradually stir into the pumpkin broth. Slowly bring the mixture to a boil. Mix in the cream then season with salt, pepper and nutmeg. Remove from heat. Pour soup into the pumpkin shell and garnish with croutons. Top with the pumpkin cap.

南瓜湯
材料:小型南瓜一個

調味料:

(1)奶油二大匙, 鹽一茶匙, 土司麵包二片, 胡椒粉少許
(2)糖半柸
做法:

南瓜去皮, 洗淨, 切小塊, 放在深盤內用電鍋或蒸籠蒸熟後取出放涼
將胡瓜放入果汁機內, 加水十柸打成泥, 然後倒入鍋內, 重新加熱煮開
將南瓜湯分成兩等份, 一分加鹽及奶油調味料後煮成鹹口味, 並撒下烤酥之土司麵包丁即成,食用時撒少許胡椒粉
將另一份南瓜湯加糖調味, 煮開後熄火, 即成甜口味之南瓜湯, 可熱食, 亦可冰涼後食用, 但冰涼之後濃度會增加, 所以冷食的話水分要多加二柸以免過
特色:

二種不同口味的南瓜湯適合早餐或簡餐之配湯

不過只有鹹口味之南瓜湯可加奶油增加香氣
甜口味者不宜,尤其冰涼後喝, 以免奶油凝結

南瓜大買3元,番茄兩個,瘦肉5-7元,蜆肉5元(可以不用但加咗會鮮味d),羌兩片.
先將瘦肉用鹽,生粉,少油,少水醃十五分鐘
南瓜洗淨切大件(好似麻雀咁大),番茄一開四,蜆肉洗淨備用.
煲滾八碗水放羌同埋南瓜,瘦肉滾十分鐘再放番茄同蜆肉再滾二分鐘收慢火滾多五分鐘加少少糖,鹽,胡椒粉即成.我覺得幾好味架.
