Q. 點解有d字明明已經係形容詞，好似blue...但係會有blued-eyes ；又有d係ended......?
如果你冇睇錯，或者你睇嘅句子由一位英文應該唔會寫錯嘅人寫嘅話，blued-eyes 應該係指佢原本對眼並唔係藍色，係被加上藍色。
冇錯，一般情況用 blue eyes，唔會用 blued-eyes。但依我推斷 (因為你冇畀上文下理)，由於有hyphenated，應該唔係無心之失。Blue本身係adjective，而blued 係用participle嚟做 adjective，意思係被弄成藍色的眼睛。
至於ended，唔清楚你問乜嘢，不過 ended都可以係 adjective，例如 ended relationship: 己終結的關係。同樣地，這用法是以 past participle 作形容詞。
Q. Each, any, every 有邊個字後面個noun可以+s 邊個唔得?
Each 同 every 都唔可以。
Any 可以。
Any 在某種情况下，同 no 嘅用法一樣。
1. Uncountable nonus 之場合
首先，係 uncountable nouns 嘅話想加都冇得加。
凡不可數名詞，因為沒有plural form，所以在任何情况下， any 一字之後的 uncountable nouns 是不需要加 s。例如: We don't have any water left.
2. Countable nonus 之場合
係 countable nouns 之場合，則視乎用途。請看以下例句:
Any questions will be dealt with immediately by our customer service.(我們的客户服務部將會立即處理任何問題。) 因為問題不只一個，所以用 plural。
下面例句來自 Yahoo Dictionary:

Are there any letters for me?
有我的信嗎?
一般來說，反而 any + (plurals) 的場合比 any + (singular) 的場合要多。你應該聽過老師問你: Any questions?
但名詞/代名詞如 anywhere, anybody，anything 等則沒有 plurals。

each, any, and every indicating that the noun is single (not plural), so there is no need to add S to the noun
