Being a native of Guangzhou, and I've been to Beijing and Hong Kong, here are my top choices:

Guangzhou:
1) White Cloud Mountain - You get a great view of Guangzhou, and many tourist choices on the mountain, including a lake, several theme gardens, cable tram, a temple and more. If you are weak or lazy, there are even shuttles take you from place to place on the mountain (not free). Best way to get there is take a taxi to the gate, and then take the tram up.

2) Sha Mian Island - It is very colonial, one of the few historical sites to visit. Many European style buildings from late 1800's and early 1900's are perserved here. The island is nice and quiet. And it's free! It's near the Huangsha subway station.

3) TianHe Square - This is the center of the new Guangzhou downtown with skyscrapers, a big new park, and new shopping malls -- a great place to hang out. It is outside the East Station subway station.

Beijing
1) The obvious Great Wall - no need for introduction, but make sure not to accept solicited tours to the Great Wall. Book ahead with your travel agents, or the 4+ star hotel that you are staying at. I learned my lesson.

2) The overrated Forbidden City - It seems like every building inside looks the same, but it's pretty grand though. There are massive constructions going on inside right now. Enter through the North Gate and exit through the South Gate -- that brings you to the Tiananmen Square.

3) Temple of Heaven - Expect lots of walking inside to go to the different sites.

Hong Kong
1) Ngong Ping 360 - This is opening soon, the 25-minute cable tram ride will allow you to see the Big Buddha, the Airport , and the South China Sea from above. It may open in September 06 (it has delayed many times).

2) Tai O - You don't expect to see such a fishing villege in Hong Kong. You thought you saw H.K. from 50 years ago.

3) The Peak - You get a great view of H.K. skyline. Make sure you take the historical tram up. The tourist spots on the peak is disppointing, but I'm all about the view.

Hope that helps.

Hong Kong is Giant Budda, Stanley Bay, Repulse Bay, The Peak, those are sight seeing places. For shopping, go Tsimshatsui, Causeway Bay & Central for brand stuff.. ifyou look for cheap & fashionable stuff, go Mongkok. Audio/computer/cell phone, Mongkok too.... good luck !
