Spock's mother's name was Amanda and she was indeed human. As mentioned, T'pau was first seen in the TOS episode Amok Time as the priestess handling the ritual Spock was involved in. She was also portrayed as a younger women in Enterprise and I believe she was the one who transfered Spock's katra in Star Trek III.

I would say T'pau except for 2 things. Firstly T'pau had about 8 hit singles. Secondly T'pau isn't Spock's mother, Spock's mother was human. T'pau was some sort of high priestess of Vulcan.
