It depends on what kind of ham. For Parma ham, slices of thin cucumber or honey dew melon go with it pretty well. For sandwich ham, crispy lettuce is fine. If you want to make salad, yes, potatoes or even pumpkins is just great. Put some mayonese with salt as well.
Potatoes are good, especially mashed. I also think green beans would work well with ham... And I love to glaze my ham and serve it with pineapple rings.

Well, it really depends on how the ham is prepared. For me, though, I always ensure to have plenty of sweet potatoes on hand. Also, Peas with pearl onions is a good choice.
